LEMON CHEESECAKE BLISS BALLS

Makes 20 balls

Ingredients

(Groups of 5)

  • 250g full fat cream cheese

  • Zest and juice of half a lemon

  • 2 rounded Tbsp honey

  • 1 cup desiccated coconut

  • 1 cup Rice Pops

  • Extra desiccated coconut for rolling

Equipment

(Groups of 5)

  • Measuring cups (1/2, 1,)

  • 1 Tablespoon

  • Medium bowl

  • Small bowl

  • Wooden spoon

  • Snap lock bags 

Process

  1. Place the cheese, lemon and honey into a medium bowl and mix until smooth and well combined. 

  2. Add the coconut and mix again until well combined.

  3. Presenter to portion out mixture into 4 equal parts. Give to students on placemats.

  4. Students to use their hands to shape the mixture into balls. 

  5. Roll the balls through the extra coconut to coat.
