Fresh and healthy Nachos – Vegetarian
Ingredients (for 1 plate of Nachos)
15 corn chips
2 tbsp sour cream
1⁄4 lime
2 tbsp mashed black beans
1⁄4 tsp taco seasoning
1⁄2 small tomato
1⁄4 cucumber
3cm piece shallot
3 coriander leaves + pinch of salt
4 tbsp tasty cheese
Method
1. Place approx. 15 corn chips on the bottom of paper container.
2. In a small bowl, mash 2 tablespoons of black beans with 1 tablespoon of sour cream until well combined. Place the black bean mixture on top of the corn chips.
3. Cut the tomato and cucumber into small diced pieces. Place it in a zip lock bag.
4. Cut the shallot and coriander into small pieces. Add to the bag with the tomato and cucumber.
5. Add a squeeze of lime and a pinch of salt. Mix until well combined.
6. Place salsa on top of the black bean mixture or save the salsa in bag if it is not being eaten immediately.
7. Mix 1 tablespoon of sour cream with ¼ tsp of taco seasoning. Place sour cream mixture on top of the tomato salsa.
8. Sprinkle 2 tablespoons of cheese on top of the sour cream.
