Apple and Zucchini Muffins

Recipe - Zucchini and Apple Muffins

The kids at Beaumont Road Public School loved these yesterday. The zucchini’s bring a lovely moisture to the mixture.

We had a glut of zucchini’s and apples that were looking a little withered. I know - we all have food at the back of the fridge that we forget about. Don’t throw them out. Trim any bits that don’t look great, then grate them up…

  • 2 cups self-raising flour or GF

  • 1/4 cup white sugar

  • 1/2 cup brown sugar

  • 1 tsp ground cinnamon

  • 2 eggs large (or see alternatives for Egg free)

  • 1/2 cup vegetable oil

  • 1 tsp vanilla essence

  • 1 cup apple grated peeled

  • 1 cup zucchini grated

Equipment

Measuring Cups ½, ¼, 1 cup

Spoons - 1 tsp

Large Mixing bowl

Spatulas

Paper towel

Muffin papers

Graters

Muffin trays

Cutting boards

Wooden spoon

Whisks or forks


Procedure

Preheat oven to 180C.

  1. Grease or line 12-hole muffin pan.

  2. In a medium bowl, combine flour, sugars’ and cinnamon. These the the dry ingredients. You want to keep them separate from the wet ingredients.

  3. In large mixing bowl, beat eggs, oil and vanilla.

  4. Stir in apples and zucchini.

  5. Add in dry ingredients and stir to combine. Try to stir only until the mixture is combined. The larger the spoon that you use, the quicker the mixture will come together. The more that the mixture is stirred, the stronger the end result will be. We want soft, fluffy muffins don’t we!

  6. Spoon into muffin pan.

  7. Using oven mitts, place the tray into the oven. If you need help, ask an adult to help you with this.

  8. Bake for 20-25 minutes.

  9. Set up the cooling tray, or clear the kitchen sink draining area, so you can have a hard surface that won’t damage when you bring out the hot muffin tray.

  10. While the muffins are cooking, use the time to rinse off the messy utensils, then place in warm soapy water. Wash all the items that you have used, and wipe down the cooking area.

  11. Using oven mitts, take the muffins out of the oven. Again, ask an adult to help you.

  12. Allow the muffins to cool for at least 10 minutes before you eat them (or you’ll burn your tongue)
