Soft Shell Tacos

This recipe is one of the most popular menu item that the KLTC teams make with kids in workshops.

They can be made as simply as cheese and avocado ( as lots of kids do) or packed with fresh and zesty tomato salsa, black beans, shredded chicken, guacamole, sour cream and cheese.

Why not get the kids to put this together for a weekend meal.

Recipe as follows:

Recipe - Makes 2 Soft Shell Tacos

Ingredients

2 soft shell taco

¼ avocado

2 tbsp sour cream

¼ lime

Pinch salt

2 tbsp cooked black beans

¼ tsp taco seasoning

¼ large or ½ small tomato

¼ small capsicum

2 tbsp corn

Pinch oregano

4 tbsp mozzarella cheese

Equipment

Chopping board

Safety Kutters or child friendly knife.

Small bowl

Medium bowl

Method

Lay out soft shell tacos.

Place the flesh of ¼ avocado into a small bowl.

Add 2 tbsp sour cream, a squeeze of lime and a pinch of salt to the bowl with avocado. Mix well and spread avocado mixture onto one half of each taco shell.

In a small bowl, mix 2 tablespoons of cooked black beans with ¼ tsp of taco seasoning. Mash the beans and mix until well combined. Place on top of the avocado mixture.

Cut the tomato and capsicum into small diced pieces. Place in a small bowl.

Add 2 tbsp corn, a squeeze of lime, a pinch of oregano and a pinch of salt. Mix until well combined.

Place the tomato, capsicum and corn salad on top of the black bean mixture.

Sprinkle 4 tablespoons of cheese on top of tacos.

Fold the taco shell in half.
